These mini muffins are perfect for toddlers who love to take a bite of their breakfast and move on to something more exciting. You already have these ingredients (spinach, apple sauce, bananas, eggs, and oats) so what are you waiting for!?

Mini Banana and Spinach Muffins for Toddlers
Prep time: 5 minutes
Bake time: 12-15 minutes
Servings: 24 mini muffins
INGREDIENTS
- 2 bananas
- 3 eggs
- ½ cup oats
- 1 handful spinach
- ¼ cup applesauce
- Optional: chocolate chips (about ½ cup)
DIRECTIONS
- Preheat oven to 350F.
- Blend the banana, eggs, oats, spinach, and applesauce until smooth. I use a Nutribullet blender for this.
- Prep a mini muffin pan using mini cupcake liners.
- Pour the batter into the pan, filling each muffin about ¾ to all the way up. If you choose to add chocolate chips, drop two or three on top of each muffin.
- Bake in the preheated oven for 15 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes and serve.

NOTES
- The more ripe the bananas are, the sweeter and more “banana-y” the muffins will taste.
- Bake time can vary, so keep an eye on things starting around 12 minutes and don’t be afraid to go longer if needed.
- You can store these muffins in the refrigerator for 5 days and if there is any leftover you can freeze them.
