The Only Dinosaur Muffin Recipe You’ll Ever Need

Okay I lied, any muffin recipe will work with this amazing dinosaur muffin pan from Nordic Ware. No, this it not a sponsored post.. I really just love this pan! Below you’ll find the recipe I always use which is great for breakfast or just an afternoon snack (or even dessert!) and you won’t go wrong as long as your kids love dinosaurs.


Dinosaur Muffins for Kids
Prep time: 10 minutes
Cook time: 16 minutes
Servings: 12 muffins


INGREDIENTS

  • 2 cups Kodiak Power Cakes Mix (Buttermilk)
  • 1 cup milk (or use almond milk or water)
  • 1 egg
  • ¼ cup maple syrup
  • ¼ cup honey
  • ¼ cup apple sauce
  • 2 bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Optional mix-ins:
    • ½ cup chocolate chips
    • ½ cup blueberries

DIRECTIONS

  1. Preheat oven to 350°F and line or grease a muffin tin.
  2. In a large bowl, whisk together the milk, egg, maple syrup, honey, apple sauce, banana, and vanilla.
  3. Stir in Kodiak mix until just combined.
  4. Fold in any optional mix-ins like chocolate chips or blueberries.
  5. Divide batter evenly among 8 dinosaur muffin cups, filling about ¾ of the way up.
  6. Bake for 14–16 minutes, or until a toothpick comes out clean.
  7. Let cool 5–10 minutes before removing from tin.

NOTES

  • The more ripe the bananas are, the sweeter and more “banana-y” the muffins will taste.
  • I always like to make half of the batch with no optional mix-ins since I’m feeding toddlers who love blueberries one day and hate them the next.
  • Bake time can vary, so keep an eye on things starting around 14 minutes and don’t be afraid to go longer if needed.
  • You can store these muffins in the refrigerator for 5 days and if there is any leftover you can freeze them.HalH
  • You’ll have left over batter which you can save for a second batch, or use in a regular muffin pan, filling ¾ of the way up.
  • If you have a donut mold, this recipe makes for a great sugar-free breakfast donut!
