Every now and then we have to wave the white flag during mealtime and let our kids eat what they want to eat. But that doesn’t mean sacrificing health, nutrition, and a complete meal. These muffins are packed with protein, healthy fat, and good carbs to help your toddler thrive. (Chocolate chips optional!)

Protein Power Muffins for Kids
Prep time: 10 minutes
Cook time: 16 minutes
Servings: 12 muffins
INGREDIENTS
- 2 cups Kodiak Power Cakes Mix (Buttermilk)
- 1 cup milk (or use almond milk or water)
- 1 egg
- ¼ cup maple syrup, honey, or apple sauce
- 2 bananas, mashed
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Optional mix-ins:
- ½ cup chocolate chips
- ½ cup blueberries
DIRECTIONS
- Preheat oven to 350°F and line or grease a muffin tin.
- In a large bowl, whisk together the milk, egg, apple sauce, banana, and vanilla.
- Stir in Kodiak mix until just combined.
- Fold in any optional mix-ins like chocolate chips or blueberries.
- Divide batter evenly among 12 muffin cups, filling about ¾ of the way up.
- Bake for 14–16 minutes, or until a toothpick comes out clean.
- Let cool 5–10 minutes before removing from tin.

NOTES
- The more ripe the bananas are, the sweeter and more “banana-y” the muffins will taste.
- I always like to make half of the batch with no optional mix-ins since I’m feeding toddlers who love blueberries one day and hate them the next.
- When I opt for chocolate chips, I always use Lily’s brand as they use stevia instead of cane sugar.
- Bake time can vary, so keep an eye on things starting around 14 minutes and don’t be afraid to go longer if needed.
- You can store these muffins in the refrigerator for 5 days and if there is any leftover you can freeze them.
